Perfect Peach Ice Cream
8 fresh peaches, peeled and thinly sliced and diced (even mashed if you prefer) – refrigerate
In large saucepan heat:
– 2 cups half-and-half cream (175 degrees)
– 3 1/2 cups sugar
– 3/4 teaspoon salt
Slowly add, whisking constantly:
– 6 eggs-beaten
Cook and stir over low heat until it reaches 160 degrees.
Remove from heat. Add:
– 4 cups heavy cream
– 2 teaspoons vanilla
Cover, cool and refrigerate overnight (or at least 2-3 hours)
Combine the custard with peaches. Freeze according to your freezer’s directions.
I let it “set up” in the ice cream freezer for 2-4 hours before serving. Read more
